For the caramel: sugar in water breaks down
Bring to boil, until the colours deep brown
Then pour at once into a warm dry tin, spreading it evenly once it’s all in
Then eggs need beating as it get cool
And you’ll need 3 eggs, half a cup of water, sugar and milk
Bring the mil almost to boil and drip over beaten eggs and sugar
Then you must sieve it all into the tin you filled before
You;; find the scent is timeless as you pour
And with some greaseproof, cover up and steam an hour or more
In its upside down mould it can be eaten hot or cold
Tip it upside down it can be eaten hot or cold
